Autumn is here, which means Halloween is right around the corner!!!  Now that I have started to pack away the summer clothes, I busted out my Fall/Winter clothes today and this Sweater vests will definitely be my go to this season. Also these Rockport boots are the most comfy, stylish, and versatile boots —I would absolutely recommend them.

Some updates on our lives ~

Now that we are back in Utah, I am finally able to enjoy all the seasons and not just summer. I’m dying over these adorable fall decorations and everything pumpkin flavored. Now that I know we are staying here, I have started making a list of all the fun date things I want to do this fall/winter and I’m also making a dream board!! I feel super motivated and want to spread happiness around:)

My husband Michael found a job, so we will be moving a little more South to Provo. We are super thrilled about this new opportunity and can’t wait to get our life back in order. I joined a local gym, started some new workouts (which I will share in an upcoming blog post), and made some new fall recipes. My favorite recipe right now is Taco soup, we had it last night and it was magnificent —  Taco Soup.  This time has been a little crazy but I am happy that we moved when we did because it will be easier to acclimate before winter is here. If you have any suggestion how a Florida girl can survive through winter please let me know??

Thankfully we have decided to go to Costa Rica for Thanksgiving — I mean who wouldn’t want to be on a beach soaking up some rays while everyone back home is frozen??? I know I would. If you know of any great places to see there, I would love to hear about it?!

Thanks for stopping by and be sure to check back soon!

With Love,

Michaela Desiree Knight

GOODBYE SAN FRAN

My husband and I decided to become tourists in our area and it has been a blast! We had such a fabulous day exploring! We decided to make a bucket list of things to do before we moved away. Muir woods and the secret swing have been top on our list so we decided to go out and find them.

MUIR WOODS

We first went to Muir Woods which was $10 dollars each to enter the park. They have a few different hikes you can go on, some more difficult than others. We decided to do the 2 mile walk/hike right as you enter the main park. It was so peaceful and mind blowing to see the gorgeous and gigantic redwood trees as well as listen to the streams and birds all around. We had so much fun taking pictures and reading all the cool facts throughout the hike. This is a Must do — and parking is free. I would recommended going early in the morning or during the weekday. Holidays are extremely difficult to find parking!!

SECRET SWING

We later went to a lookout of the Golden Gate and found a hidden swing at a beach called kirby cove. We parked by marin headlands/battery spencer and hiked down a dirt path for about a mile. You walk through a campsite and down to the beach. On the left there is a huge rock and you can see the swing usually with a few people on it. It has one of the most spectacular views of the Golden Gate I have ever seen. The tide can sometimes come up super high so be prepared to get your feet a little wet. They have a super awesome campsite that we are dying to come back to.

We had the best time swinging, talking, and taking gorgeous pictures. This hidden gem will make you appreciate San Fran and its amazing views even more.

Happy Saturday! So I did a big thing while I was here… I chopped off my hair and I am loving it!!!! It has been so exciting and eventful visiting my friends and family these past few weeks in Florida. I was so happy to have a little sunshine yesterday since the rest of my trip will be filled with thunderstorms. While visiting I have been able to  see amazing white sandy beaches, visit Orlando, try new delicious restaurants, and go to the Nordstrom Rack sale with my Mom and friend Caitlyn.  I scored this flattering and elegant dress for $50!! I surprisingly do not own a black dress so I was thrilled to find one that I loved and felt beautiful in.

I have a few days left here in FL, and I am going to try to make the most of it. If any of you have suggestions for rainy day activities I would love to hear them!! It’s always heartwarming to come home and spend quality time with the ones I love.

Much love,

Michaela Desiree XOXO

Winter Park Orlando Scenic Boat Tour

I have always adored Orlando … there are a million things to do there. I tried to find some place that was cheap and would not take too long (due to us needing to be at the airport at a reasonable time). I stumbled upon this awesome boat ride and wanted to share it with all of you!

I’m home visiting for a few weeks so my family and I decided to go and see something new and different while I was here. We were dropping my brothers sweet girlfriend off at the Orlando airport so we tried to find an adventure in that area.

The town of Winter Park is extremely charming. First we flew one then we jumped out of one…..

First we flew one then we jumped out of one…..

I want to apologize for being MIA lately. My life has been super crazy and because of that I had to neglect my blog a little bit 😦

Lately I have been reminiscing about 2015 and all the crazy adventures I had! One of my favorite and most memorable experiences had to be SKYDIVING! It was the most thrilling and terrifying day of my life. My husband and I were recently talking about it and I told him “I wanna go Skydiving once a year for the rest of my life. I want to remind myself that I am alive and to enjoy every second of it.”  I know it sounds a little crazy and different but I genuinely felt so grateful for my life when I was jumping out of that plane.

A year ago this month our friend Anthony bought Michael a certificate to go skydiving for his birthday. Awesome present right?! He had been trying to convince us to go for a long time and we always had an excuse, so he finally just got it for him. I had no intention of jumping out of a plane at 10,000 feet that day … NO WAY!!! I was there for moral support and to make sure my husband made it out ALIVE. But on the hour and a half drive to “Skydive California” while on the phone talking to my dad, best friend, and Michael they all convinced me to jump! I was freaking out ….. I mean honestly it’s not every day you fling yourself out of a plane…. let alone relying on someone else to pull the parachute.

We show up to SkyDive California and the first thing that I see is people falling out of the sky. I started to rethink my absurd decision. I had always told people I wanted to skydive on my 100 birthday but I guess 80 years earlier wouldn’t hurt.

After you sign your life away you go and meet your instructors. My instructors name was Lee and he was so AWESOME! He made me feel so comfortable and safe. I had to trust him with my life, so it helped that he was so nice and understanding throughout the process. We started asking a lot of question such as “How many jumps have you done, When did you start, what made you want to keep doing it” and most of all I kept asking “Am I going to die????” They all laughed and reassured me that I would be fine and that I would not die….Michaela 0017

Michaela 0002

Michael was pretty quiet throughout the entire process. He probably would not admit it but he was just as scared as I was. Before we headed the plane– Michael and I were discussing whether to call our Moms before or after we jumped. We both decided we better call then before just IN CASE anything happened.  When I called my mom  she started crying and tried to talk me out of it. In a way it made me less nervous having someone else be more scared than I was!

Michaela 0013

Michaela 0017

The plane took about 20 minutes to get up to 10,000 feet….  those 20 minutes felt like forever and a great opportunity to talk yourself out of it a hundred times. When we reached the altitude and they told us they were ready to open the doors. What did I do? Well I did what any sane person would do……. I started screaming at the top of my lungs. Everyone in the plane started laughing and Michael and his instructor started to move to the edge of the plane. Michael looked back at me and all I could say was I love you. Watching your husband jump out of a plane is almost scarier than jumping out yourself.

Michaela 0026

Michaela 0037

We slowly made our way to the edge, said hi to the camera and 1….2…….3 JUMP! I have never felt to much adrenaline run through my body at one time. Looking down at the ground below me was amazing yet terrifying. You could see everything from up there. I would scream then stop then scream then stop… I was in awe that I was actually falling through the sky. Then I felt a tug as Lee pulled the parachute.

After the parachute is out you basically glide the rest of the way. I can remember turning to Lee and saying “this is what birds get to experience every day.”  We got to watch the sunset and take in all the beauty around us. That sunset was one of the most beautiful sunsets I have ever seen. Lee let me pull on one side and then pull on the other showing me how to turn and control the parachute it was a blast!

The second we landed the first thing I said was ” I wanna do it again”! It really is an addicting feeling and great adrenaline rush. I see why Anthony loves it so much.  You feel free.

Foam Rolling!

For the longest time, I had seen foam rollers in all kinds of stores – even the ones where you wouldn’t expect to find them! I’ve heard friends rave about them and I’ve heard about how amazing they are, but I always thought they looked funny and I never understood why someone would want to roll around on a piece of foam and how that could feel so great. Finally I had a friend that really sold me on them when I was training for my half marathon and I went down to a local sporting goods store and picked one up.

My honest first impression? Not a good one. I had no idea how to use it at first and thought it was really uncomfortable and awkward.

After hearing all the hype, I really wanted to see if I would ever like it, so I gave it another chance and started to use it morning and night. Over time, I started to notice a big difference! I have some really bad lower back problems and rolling for even 5-10 minutes a day made all the difference in releasing the tension in my back. I also started to notice that my muscles weren’t as sore when I consistently used the roller. And on the days that I don’t use the roller? My body feels it big time!

Foam rolling not only helps you to warm up before working out, but it also helps your body to cool down and recover effectively. Some of the other benefits of foam rolling include:

  • Improved blood circulation
  • Reduced muscle tightness
  • Reduced pain
  • Reduced soreness
  • Increased flexibility
  • Helps to prevent injuries
  • Helps with de-stressing
  • Helps to build core muscles

When I looked into why foam rolling feels so good and why it works, I found that our muscles are covered with a thin, plastic-like layer called fascia. Sometimes the fascia bunches up and when we roll our muscles out, it releases the tension in the fascia and relaxes our muscles. There are also exercises you can do on a foam roller that will help you to build core strength.

Aim to roll 5-20 minutes daily. Use a roller on any part of your body; I’ve found that it works really well on my quads, hamstrings, glutes, calf muscles, and back. Try to roll slowly over the pressure points in your muscles for about 30 seconds to a minute. It can be sometimes be painful, but the longer you do it the more effective it will be. When I have a really sore spot I try and focus on that area longer until the tissue loosens and starts to break down.

Below are a few different roller options. Some people go for color or for the more extreme massage patterns, but that is entirely up to you! There are a few different lengths as well; all will work similarly, but I am using an 18 inch roller and it seems to be the perfect length!

Meal Planning — Salads for two

Meal Prep

Salads for two people (5 days)

  • 10 Mason jars
  • 2 Bags of romaine lettuce
  • 1 bag of spinach
  • 5 chicken breasts (Grilled or baked)
  • 2 cucumbers
  • 2 cans of black beans (15-20 oz.)
  • 2 cans of pinto beans (15-20 oz.)
  • 10 hard-boiled eggs
  • 4 medium to large bell peppers
  • 1 container of grape tomatoes
  • Shredded cheese (add as much as desired of whichever cut of cheese you like best)
  • Your choice of dressing (I used different dressings for different days)

These are the ingredients I used, but feel free to add or take out any ingredients that you may not like or want to include!

  1. Chicken ~ Pre-heat the oven to 445 degrees and cook for 50 minutes. My chicken was basically frozen, but if you use thawed chicken you will only need to cook it for 25-30 minutes.
  1. Pat down the chicken with a paper towel and drizzle it with olive oil. I added my favorite seasonings, but feel free to prepare the chicken to your liking. Once you do that, put it in the oven. I took the chicken out after 25 minutes and flipped it over. After letting it bake for another 10-15 minutes, I cut into the chicken to make sure it was cooked all the way through and that it wasn’t raw in the middle.
  1. This is the most important step…make sure to put the dressing in very first and let it set on the bottom of the Mason jars – you don’t want it touching the lettuce and making it soggy.
  1. Add beans, veggies, cheese, and eggs as desired in each jar.
  2. Once the chicken is done, cut or shred, and add your desired proportions on top of all of the wet ingredients (steps 3 and 4 above); the chicken helps to separate the wet ingredients from the lettuce.
  1. Lettuce/spinach is the very last thing you should add. Add as much or as little as you desire, but I would recommend stuffing in as much as you can – you don’t want too much air in your jars.
  1. Store in the refrigerator and enjoy!

Nike Women’s half marathon in San Francisco

Untitled

If you have ever thought about running a half marathon, I would definitely recommend running the Nike Women’s half marathon!

I have never been much of a runner, but my friend Brittany asked if I wanted to be a part of her team and run in this race. I decided to do it even though I had never run more than 4-5 miles. I signed up in July a few days before registration closed but knew I had time to train, because the race was not until October!

It is a lottery so you don’t know if you made it in until a couple weeks later. I finally got an email that said “Congratulations You’re in!” ….. and I was terrified!

Well time went by and I had only trained a few times here and there. I suddenly realized the race was only weeks away… so I started running when I could and I did Yoga often. I was so scared I tried to find every excuse I could to not do it. However, I had already paid so there was no getting out of it. My husband encouraged me and kept telling me to think positive and that I could do it!

When the week of the race arrived I started researching what to eat, drink, and do before the race. The number one thing I kept seeing was to drinks LOTS of water! So the Monday before my race I started to drink as much as I could, whenever I could. I also started to use a foam roller everyday to loosen my muscles and I tried to stretch.

There was an early packet pick up, which I took advantage of . I picked up my bib and gear bag. I would suggest trying to go to an early pick up, to avoid the horrendous lines you would otherwise run into! I was able to get my Nike shirt personalized with my name for FREE.

IMG_0031

The Saturday before my race I went and had a carb-loaded pasta dinner. It is very important to carb load up to two days before your race so that your body can turn those carbs into energy— which you will need! I drank a ton of water before going to sleep as early as I could.

Making sure you get to bed early will also be crucial. Before getting in bed I made sure I had everything I needed, from my bib to the pair of socks I was going to wear. I was super nervous/excited so it was pretty hard to fall asleep. I told Michael (my husband) that I felt like Santa was coming in the morning!

I had to wake up at 4:15 AM to get everything ready and eat my pre-race breakfast, which was half of a bagel and a banana. I drank about 16oz of water right when I woke up and a few sips before I started my race. We had to drive up to San Francisco, which took about an hour, so it gave me some time to wake up and mentally prepare!

When we arrived, we found parking only a few blocks away from the starting line. Michael brought his bike, so that he could ride along the route and meet me throughout the race. He walked me to my wave/corral and wished me luck!

I was in the 10-10:59 wave so I would not start running until about 30 minutes after the gun time. When it was finally my corral’s turn, my heart was beating so fast and my adrenaline was pumping. As I passed the starting line my official time said I started at 6:56:35.

Nike put a tracker on each bib so that if your friends or family wanted to track your number they could. I had my parents, husband, and a few friends tracking my run. It made it much more exciting knowing, I had them cheering me on every mile and knowing where I was at! There was also a satellite option that allowed them to see my surroundings as I passed them.

IMG_0051

IMG_0063

The first few miles I just focused on moving at a steady pace and preserving as much of my energy and strength as possible. Throughout the race there were multiple water/bathroom stations. I took advantage of every stop that I could but made sure not to spend too much time there.

I hit the 5k mark at about 37 minutes and 10k at 1:15 minutes. My legs started to go numb at this point and it all started to became a mental battle. I had to keep reminding myself why I was doing this and that I could do this! STAY POSITIVE! I made sure not to compare myself to the women surrounding me who probably trained much more than I did.

Every time I came to a water station I made sure I took a drink of water as well as Nuun (an electrolyte drink that Nike volunteers and supporters were passing out). It can’t stress enough how important it is to stay hydrated throughout the race; your body loses so much water and nutrients that you need to keep renewing them when you can!

When I reached Mile 7 I finally saw my husband, and I was sooo happy! I think it is really great to have someone at the race supporting you and cheering you on. All of the supporters were great, but seeing someone you know is that much more motivating. He told me I was doing awesome and to keep going!IMG_0074

IMG_0073

Every mile that you pass in the race there are some group of supporters – anywhere from bands, dancers, and choirs to cheerleaders. I was so excited every time I saw a mile marker and it was always fun to guess what would be waiting for us; I couldn’t believe that my body had made it that far. I was so proud of myself for persevering!

On mile 11, we ran by and they even handed out a much needed treat – a piece of Ghirardelli chocolate! Talk about being pampered!! As you can see the look on my face (pictured above), I don’t think I have ever been more excited for a delicious piece of chocolate! Everyone had the biggest smile on their face and kept thanking the volunteers as they got their piece.

At this point there were only two miles left!! Those last two miles were killer…… I started thinking “Tiffanys necklace… you’re mine…. You can do this!” I mean, the necklace was one of the main reasons I wanted to run this race in the first place! Not to mention the cute firefighters in tuxedos that you take pictures with at the end!

While I was running my last mile, there were thousands of people lined up with signs of encouragement screaming and cheering everyone on. I knew my cute husband would be waiting for me and so proud at the finish line. When I finally saw the finish line, I gave it my all and I finally crossed the finish line at about 2 hours and 41 minutes.

I have never felt so accomplished in my life….. I actually finished a half marathon! I had never run that far before. I was so happy that I was practically in tears. I started looking for my husband, but couldn’t find him anywhere because the crowd was so big and we didn’t have a meeting plan, which would have been the smart thing to do. I finally got what I had been waiting for… I got my Tiffany’s necklace!

IMG_0061IMG_0049

After I finally found my husband, I also got my picture taken with the firefighters! After 13.1 looong miles, I had made it and my dream had come true!

IMG_0062

I learned a lot about myself during that race. There were times I wanted to give up, quit, and cry, but I pushed forward. I learned that I could do anything that I put my mind to and that I am a lot stronger than I ever thought I was.

I also learned the importance of preparation; I would strongly recommend training for at least 12 weeks before doing a half marathon, as my body is now in more pain than I’ve ever been! This year, my goal was to make it to end and to get the necklace. Next year, my goal will be to beat my time and to be able to actually run up the hills.

IMG_0033

If you have any specific questions about this half marathon, if you’re an avid runner or if you’re looking to run a marathon sometime soon, please comment and visit my blog!!! I would love to hear your thoughts – I already can’t wait for next year!!

Cooking can be easy and healthy with Blue Apron!

Eating healthy is not always easy or convenient, or so I thought. I have recently come across Blue Apron and for those of you who have never heard of it, it’s a food service that delivers delicious recipes and all of the ingredients weekly to your front door. It’s awesome because the ingredients are always fresh and the meals are basically gourmet. It comes in a refrigerated box so even if it arrives when you are at work or out for the day, the ingredients stay fresh!

I have never been a big fan of the grocery store especially when I need specific items for a meal, but don’t want to buy a whole box of that ingredient. Blue apron provides you with the exact amount of ginger, soy sauce, lemons, etc that you need to make the meal. Another plus is that each serving is only 500-700 calories and they never repeat meals in the same year.

They send three meals each week and they’re all so yummy and easy to make! You can personalize your order by choosing either 2-person or family plans and if you have any dietary preferences you can even personalize the menus you receive! I love Blue Apron because it makes me try meals that I otherwise wouldn’t ever think of making and it gives me more options when I run out of ideas for dinner. I was so happy that it came with an easy, step-by-step instruction card of how to make the meal and it’s a huge time saver for those of you who don’t have much time to go to the store to buy ingredients and do all of the food prep. I’m already planning on remaking quite of few of the meals.
